The train from Paris to Amsterdam was painless. All we had to do was walk right across the street to check in at the NH Collection Amsterdam Barbizon Palace.
After everyone settled in, we set out to see the city. We passed De Oude Kerk and the Royal Palace Amsterdam before sitting down at Ter Marsch & Co for burgers, fries, and beers. Then I steered the crew towards Van Wonderen Stroopwafels.

We walked to Winkel 43 for coffee and apple cake to start the day. And then to Breadwinner for some amazing bagels and lox.
We walked over the picturesque bridges and canals to Foodhallen, where we just grabbed a couple drinks and used the restrooms. Then we had Anne Frank Museum tickets. The museum was very moving and powerful.
The group aligned on Ramen Kingdom for dinner, but we had to eat it so quickly in order to make our evening canal cruise. The boat went through many canals that we hadn’t seen at night yet, showcasing the year’s themed light show which was AI and technology. The theme was rather ‘meh’, but seeing the lights on the buildings was pretty.

We sat down at The Pancake Bakery for some Dutch pancakes before the Heineken Experience. The pancakes reminded me of giant Swedish pancakes because of their flat and rather flavorless nature. The Heineken Experience was so much fun and everyone could move through it at their own pace. We learned about the history of Heineken, how the make the beer, and had a couple beers along the way.
All boozed up, we needed to sit down to eat something. We snagged a table at Soju for Korean fried chicken.
We walked through a small and crowded Christmas Market by the Rijksmuseum, before dinner at Kaasbar, a cheese conveyor belt restaurant. It was such a fun experience.

We ended our Amsterdam weekend with brunch at Box Sociaal in Jordaan before catching a train back to Paris.
